3 Yummy and Quick Vegan Recipes

While vegan food and recipes become more and more required around the world by food lovers of every age, we can all agree on one point: it takes time and dedication.
Yes, a vegan lifestyle is not one of the easiest one to be dedicated to, but when nutrition and respect for the nature around us becomes our priority, we are ready to make some sacrifices.
Everyday, many new curious and interested foodies decide to take a step into the interesting and stimulating world of veganism. But how to start? One thing you can do is, of course, go to a vegan restaurant. Unluckily, such places are not available everywhere.

Most vegans prefer to cook their own meals at home.
If you are still holding onto your dairies but would like to take a look into this new lifestyle, this incredibly useful list is for you. I handpicked a list of tasty, quick and easy vegan recipes which will definitely let you take the glance you need.

Breakfast: Vegan French Toast

You will need:
1 banana
1/2 cup fortified soy milk
1 tbsp maple syrup
1/2 tsp cinnamon powder
4 slices wholegrain bread
Vegan margarine/vegetable oil

Mix the mashed banana, soy milk, maple syrup and cinnamon powder.
Warm up the oil or margarine in a frying pan and keep the heat high. Then place the wholegrain bread slices in the pan, after dipping them in the mix. Cook each side until brown et voilà.

Lunch: Baked Potato and Mexican Beans
Nothing is easier and more energetic than this ultra-quick recipe! It is also very filling. The best power lunch.
You will need:
1 can mexican beans
2 potatoes
salt & pepper

Prick the potatoes with a fork before baking them in the oven. Baking time is about 5 minutes; the result should be softness on the inside with a crispy skin.
Cut open each potatoes in half and pour your beans on each half. You can add vegan margarine before pouring, or you can warm up the beans in a pan shortly before the potatoes are ready.

Dinner: Falafel Pie
When it comes to falafel, I can hardly resist. This pie will fill you with no need of frying. It’s a win-win!
You will need:
Falafel Mix
1 can Hummus
1 jar soy yogurt
1 lemon
1 cucumber
1 tomato
1 jar black olives
Bake the falafel mix in a baking pan for about 15 minutes, after preheating the oven at 350°. Afterwards, top with hummus and sliced tomato & half cucumber. The other half of the cucumber will need to be blended (in a blender!) together with the yogurt and a spoonful of lemon juice. Pour the result on the pie and enjoy!
Each one of these recipes are easy to make, inexpensive and incredibly fun. I personally suggest to add your favourite cooking playlist in the background (French music for me!) and cook away.
